A flagship restaurant redefining what hotel dining can be.

When SH Hotels brought their 1 Hotel brand to Australia, they needed a signature restaurant that would embody the group’s ethos of sustainability, design, and conscious luxury — while also anchoring the hotel as a destination in its own right.

The challenge was to create something bespoke and deeply rooted in place, rather than a generic “hotel restaurant.”

Approach

I developed From Here by Mike as a bespoke flagship concept, designed from the ground up to showcase Victoria’s farmers, fishers, and winemakers.

The restaurant narrative was built around hyper-local sourcing, seasonal storytelling, and minimal food miles. Every element was considered:

Menu & Wine Program — focused on Victorian produce, paired with low-intervention Australian and global wines.

Supplier Partnerships — forged directly with hyper local Victorian producers

Guest Journey — designed to create a sense of connection

Outcome

Within months of opening, From Here by Mike became the signature of 1 Hotel Melbourne and a proof point for how luxury hotels can lead with authentic, values-driven dining.

The project not only elevated the hotel’s F&B profile but also created a scalable model for future 1 Hotels and Treehouse properties worldwide — demonstrating that hyper-local, producer-led dining can sit at the heart of a global luxury brand.
